Instant Pot Hoppin' John: A savory blend of black-eyed peas, ham, and brown rice, pressure-cooked to perfection.
Ingredients:
  • 4.5 cups water
  • 0.5 (16 ounce) package dry black-eyed peas - sorted, rinsed, and drained
  • 2 tablespoons salted butter
  • 0.5 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups uncooked brown rice
  • 2.5 cups chicken broth
  • 2 cups diced cooked ham
  • 0.5 cup chopped green onions
  • salt and ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Place black-eyed peas and water in an Instant Pot. Seal the lid, set to high pressure for 15 minutes per manufacturer's instructions, and wait for pressure to build for 10-15 minutes.
  • After setting the Keep Warm function for 5 minutes, safely release the pressure using the quick-release method following the manufacturer's guidelines, which takes about 5 minutes. Finally, unlock and lift off the lid.
  • Separate peas from the cooking liquid. Clean and dry the pot, then place it back on the stove.
  • In the cooker, saute onion, butter, and garlic for 2 minutes. Stir in brown rice until toasted, approximately 2 minutes. Add chicken broth, ham, green onions, salt, and pepper. Pressure cook on high for 22 minutes following manufacturer's instructions. Let pressure release naturally for 10-15 minutes before serving.
  • Activate the Keep Warm function for 10 minutes, then carefully release the pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Unlock and lift the lid off.
  • Choose the Saute function and mix in the peas and cayenne. Gradually incorporate reserved liquid as needed for moisture. Cook until warmed through, approximately 5 minutes, ensuring a moist consistency without being soupy.
