Wholesome Instant Pot khichdi made with dal, mung beans, and brown rice for a tasty and nutritious vegetarian meal.
Ingredients:
  • 0.25 cup split yellow dal
  • 1 cup brown basmati rice
  • 0.5 cup whole green mung beans
  • 8 tablespoons ghee, divided
  • 1.5 teaspoons cumin seeds
  • 1.5 teaspoons brown mustard seeds
  • 1 shallot, sliced
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon goda masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 6 cups water
Instructions:
  • Start by giving the rice and mung beans a quick rinse, then cover them with water and allow them to soak for 15 minutes. Rinse the split yellow dal and add it to the rice and mung beans to soak for another 15 minutes. Finally, drain the mixture and set it aside.
  • Heat up your multi-functional pressure cooker (like an Instant Pot) and choose the Sauté function. Add 2 tablespoons of ghee to the pot. Sauté the cumin and mustard seeds in the ghee until they become fragrant, which should take around 2 minutes. Next, add the shallot and ginger, cooking until the shallot becomes soft and translucent, which should take about 5 minutes. Toss in the drained rice and legumes, and give everything a good stir to mix. Then, switch off the Sauté function.
  • Mix in the fragrant goda masala, turmeric, pepper, and salt. Pour in water and stir until combined. Seal the lid securely. Choose high pressure and set the timer for 18 minutes as per manufacturer's guidance. Let pressure build for 10 to 15 minutes.
  • Let pressure release naturally for 15 minutes, then manually release any remaining pressure for an additional 5 to 10 minutes. Stir khichdi and serve in 6 bowls, topping each with 1 tablespoon of remaining ghee.
