30-minute Instant Pot pasta primavera with frozen veggies - a quick and delicious family favorite!
Ingredients:
  • 2 tablespoons salted butter
  • 1 small yellow onion, chopped
  • ground black pepper to taste
  • 1 medium lemon, juiced
  • 0.33333334326744 cup Marsala cooking wine
  • 0.5 (16 ounce) package tri-color rotini pasta
  • 1.5 cups water, or as needed to cover
  • 2 (12 ounce) packages frozen stir-fry vegetables
Instructions:
  • Preheat multi-functional pressure cooker on Saute function. Melt butter and saute onion until translucent, about 5-7 minutes. Add garlic and cook until fragrant and butter begins to brown, about 1-2 minutes. Season with pepper.
  • Gently pour in lemon juice to unleash a burst of flavor and let the pot work its magic. Introduce cooking wine and promptly switch off the heat. Deglaze the pot by scraping off any delicious browned bits with a spoon. Add pasta and pour in water until it just covers the pasta.
  • Place a steamer basket over the pasta and top with frozen vegetables, then season with salt and pepper. Lock the lid and set to high pressure for 1 minute following manufacturer's instructions. Let the pressure build for 10 to 15 minutes before enjoying.
  • After natural release for 2 minutes as per manufacturer's instructions, carefully quick-release remaining pressure. Unlock and remove the lid, then stir vegetables into the pasta after removing the steamer basket.
