Tender short ribs cooked in flavorful wine sauce quickly in the Instant Pot for maximum flavor in less time.
Ingredients:
  • 1 (750 milliliter) bottle full-bodied red wine
  • 4 pounds beef short ribs
  • 0.25 cup olive oil
  • 3 tablespoons unsalted butter
  • 1.5 cups chopped white onion
  • 1 cup peeled and minced carrots
  • 2 cloves garlic, sliced
  • 2 sprigs fresh rosemary
  • 1 quart chicken stock, or as needed
  • 0.25 cup water
  • 2 tablespoons cornstarch
Instructions:
  • Cover the short ribs in a generous amount of red wine in a large bowl. Let them marinate in the refrigerator for at least 8 hours or preferably overnight.
  • Take the ribs out of the marinade, keeping the marinade aside for later. Season the short ribs with salt and pepper, then coat one side of each rib with flour.
  • Preheat the "Saute" setting on an electric pressure cooker like an Instant Pot and add olive oil and butter. Stir until the butter melts, approximately 2 minutes. Add 3 short ribs to the hot butter and oil. Brown the bottom for about 8 minutes. Transfer the browned short ribs to a plate. Repeat with the remaining short ribs, keeping the butter-oil mixture in the pot.
  • Sauté onion, carrots, garlic, and rosemary in the flavorful butter-oil mixture, stirring until onion softens and slightly browns, for about 5 minutes. Pour in the reserved wine marinade, stir thoroughly, and let it simmer until the wine reduces by half, for about 10 minutes.
  • Place the ribs back in the pot and pour in the chicken stock, making sure the liquid level is below the max fill line and most of the ribs are covered. Seal the pressure cooker by turning the venting knob on top to "Sealed" until the floating valve rises.
  • Activate the "Manual" function and adjust the timer to 35 minutes. Gently tap the venting knob using a wooden spoon or spatula. Safely step back and rotate the knob to face "Vent." Open the lid once the pressure has been released, typically around 5 minutes.
  • Place the succulent ribs on a plate and tent them with shiny aluminum foil, leaving the delectable sauce in the pot.
  • 1. Heat the Instant Pot on "Saute" mode. Let the sauce simmer until slightly reduced, around 5 minutes. Combine water and cornstarch in a bowl until smooth, then pour into the sauce in the pot. Cook for 3 minutes. Strain the sauce and drizzle over the ribs before serving.
