Transform tough flank steak in Instant Pot to tender, shredded deliciousness perfect for sandwiches or stew.
Ingredients:
  • 1 (1 1/4 pound) flank steak, cut into 8 pieces
  • 2 tablespoons avocado oil
  • 1 (8 ounce) package cremini mushrooms, roughly chopped
  • 1 medium onion, finely chopped
  • 2 large cloves garlic, grated
  • 0.25 cup dry red wine
  • 1.5 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 0.75 teaspoon salt, or to taste
  • freshly ground black pepper to taste
  • 0.25 cup water
  • 3 tablespoons all-purpose flour
Instructions:
  • Preheat Instant Pot on Sauté function. Brown steak in batches for 3 to 5 minutes per side. Place on a plate.
  • In a pot, warm up avocado oil. Cook mushrooms and onion until onion turns translucent, for around 5 minutes. Stir in garlic and thyme, and sauté until fragrant, for about 1 minute. Add wine and cook until almost evaporated, for about 2 minutes.
  • Combine broth, Worcestershire sauce, salt, and pepper in the pot and bring to a gentle simmer. Add steak and ensure it is coated with the flavorful broth mixture. Choose the Meat setting, seal the lid securely, and set the timer for 20 minutes. Give it 10 to 15 minutes for the pressure to build up.
  • Let the pressure naturally release for at least 20 minutes following the manufacturer's instructions. Then, transfer the steak to a plate.
  • In a small bowl, mix water and flour into a smooth slurry. Select the Sauté function, and gradually pour the slurry into the pot with the broth mixture. Cook until the liquid thickens, about 3 to 5 minutes.
  • Shred the steak using two forks, then mix it back into the pot with the liquid.
