Instant Pot Turkey Bolognese: A heavenly twist on classic Bolognese with hidden veggies for picky eaters.
Ingredients:
  • 0.5 (16 ounce) package rotini pasta
  • 1.25 pounds ground turkey
  • 1 shallot, minced
  • 1 teaspoon granulated garlic
  • 1 teaspoon Italian seasoning
  • 2 medium carrots, cut into 1/2-inch pieces
  • 1 medium zucchini, cut into 1/2-inch pieces
  • 1 (14 ounce) jar marinara sauce
  • 0.75 cup low-fat milk
  • 2 ounces low-fat cream cheese
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Bring a large pot of salted water to a lively boil and cook rotini until al dente, approximately 8 minutes.
  • Preheat your Instant Pot on Saute mode and saute turkey, shallot, garlic granules, and Italian seasoning until turkey is crumbly and browned, around 5 minutes. Turn off Saute mode and layer carrots and zucchini on top of the turkey mixture.
  • Combine the marinara sauce and milk, then pour the mixture over the vegetables. Place the cream cheese on top without stirring. Close and lock the lid before selecting high pressure and setting the timer for 5 minutes as per the manufacturer's instructions. Wait for 10 to 15 minutes for the pressure to build up.
  • After pressure cooking, carefully release pressure following manufacturer's instructions for 5 minutes. Then remove the lid, add drained pasta, and stir to combine.
