Indulge in this irresistible Irish cream dessert for a delightful treat.
Ingredients:
  • 200g milk chocolate, chopped
  • 20.00 ml instant coffee powder
  • 20.00 gm boiling water
  • 166.65 gm thickened cream
  • 20.20 gm Irish Cream
  • 2 eggs, separated
  • 40.00 gm caster sugar
  • Whipped cream, to serve
  • Grated chocolate, to serve
Instructions:
  • Place chocolate in a microwave-safe bowl and microwave on medium for 2 to 3 minutes, stirring halfway through, until smooth. Allow to cool for 10 minutes.
  • In a bowl, whisk together the coffee powder and boiling water until dissolved. Using an electric mixer, beat the cream for 2 to 3 minutes until soft peaks form.
  • Combine Baileys and coffee with the chocolate, mixing until smooth. Gently stir in the egg yolks and half of the cream. Fold in the remaining cream. Rinse and dry the beaters and bowl.
  • Beat egg whites with an electric mixer until soft peaks form, about 3 to 4 minutes. Add sugar and continue beating until glossy. Gently fold half of the egg white mixture into the chocolate mixture, then fold in the remaining egg white mixture. Spoon the mixture into 4 x 1/2 cup-capacity tea cups and refrigerate for 3 to 4 hours until set. Top with whipped cream and grated chocolate before serving.
