Irish Soda Bread with Raisins

Enhance Irish soda bread with sweet raisins, ideal for pairing with tea or coffee.
Ingredients:
  • 8 cups all-purpose flour
  • 0.75 cup white sugar, or more to taste
  • 2 tablespoons baking powder
  • 2.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2.25 cups buttermilk
  • 1 cup butter, softened
  • 1.5 cups raisins
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet with parchment paper.
  • In a bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix in buttermilk, butter, and eggs. Knead by hand or use an electric mixer, then add raisins. Divide dough in half and shape into 2 loaves. Arrange on baking sheet.
  • Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center of each loaf comes out clean.
