Delicious Irish tea cake - buttery, moist, versatile. Enjoy plain, with berries, or dusted with powdered sugar with tea or coffee.
Ingredients:
  • 1 cup white sugar
  • 1.5 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup milk
  • 0.25 cup confectioners' sugar for dusting
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9-inch round pan by greasing and flouring it.
  • In a mixing bowl, use an electric mixer to combine the sugar and butter until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  • In a mixing bowl, whisk together flour, baking powder, and salt. Gradually stir in the dry ingredients into the wet ingredients, alternating with milk. Add 1 to 2 extra tablespoons of milk if the batter is too thick. Evenly spread the batter into the prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes until a toothpick inserted into the center comes out clean. Allow to cool in the pan on a wire rack for 10 minutes, then transfer to a serving plate and cool to room temperature for 20 to 30 minutes. Dust with confectioners' sugar just before serving.
