Indulge in quick and delicious Irish yogurt bread in half an hour!
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup currants or raisins
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 container (6 oz) Yoplait® lemon, orange or plain low-fat yogurt
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat oven to 375°F. Lightly grease a 9x1 1/2-inch round pan with shortening.
  • In a medium bowl, combine flour, currants, baking powder, baking soda, and salt. In a separate bowl, mix yogurt and oil, then gently stir into the flour mixture until just moistened. Spread the dough in the pan.
  • Bake for approximately 20 minutes until a toothpick inserted in the center comes out clean. Cut into wedges and serve either warm or cool.
