Italian "Veggie Burger" Bake

Elevate family dinner with Italian-inspired veggie burger baked to perfection. Delicious!
Ingredients:
  • 1 cup uncooked orzo or rosamarina pasta (6 oz)
  • 4 frozen soy-protein burgers
  • 3 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 1 container (7 or 8 oz) plain hummus (3/4 cup)
  • 1 cup crumbled tomato-basil feta cheese (4 oz)
  • 1/3 cup pitted Kalamata olives, coarsely chopped
Instructions:
  • Preheat the oven to 350°F. Grease an 8-inch square (2-quart) glass baking dish with cooking spray. Prepare the pasta according to package instructions.
  • Place the burgers on a large microwavable plate and cook uncovered on High for 2 to 3 minutes, flipping them once, until thawed.
  • In a preheated skillet coated with cooking spray over medium-high heat, sauté the pepper and onion stir-fry for 2 to 3 minutes until crisp-tender. Add diced tomatoes and continue cooking for 4 to 6 minutes until slightly thickened. Remove from heat and serve.
  • In a medium bowl, toss the pasta with the hummus until well coated. In a baking dish, create layers starting with half of the pasta mixture, followed by the vegetable mixture and cheese. Place the burgers on top. Repeat with the remaining pasta mixture, vegetable mixture, and cheese. Sprinkle the olives evenly over the top.
  • Cover the dish tightly with foil and bake for 35 minutes. Uncover and bake for an additional 5 to 10 minutes until heated through. Allow it to stand for 5 minutes before serving.
