Italian Beef Kabobs

Upgrade Italian night with zesty beef kabobs and couscous for a delightful twist!
Ingredients:
  • 1 1/2 pounds beef boneless sirloin or round steak, 1 inch thick
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 package (8 ounces) whole mushrooms
  • 1 medium zucchini, cut lengthwise in half, then cut crosswise into 3/4-inch slices
  • 1/2 cup Italian dressing
  • 9 small red potatoes, cut in half
Instructions:
  • Dice the beef into 1-inch pieces and combine it with the bell pepper, mushrooms, and zucchini in a medium glass or plastic bowl. Mix in the dressing until everything is coated well. Cover and refrigerate for at least 1 hour, stirring occasionally, but no longer than 12 hours.
  • Preheat your grill. Place potatoes in a medium saucepan and cover with water. Bring to a boil, then simmer for about 10 minutes until almost tender. Drain and let cool slightly before proceeding.
  • Separate beef and vegetables from the marinade; set aside the marinade. Skewer beef, marinated vegetables, and potatoes onto twelve 9-inch metal skewers, making sure to leave a 1/2-inch gap between each item. Brush the kabobs with the reserved dressing.
  • Grill the kabobs over medium heat, turning and brushing with dressing after 3 minutes, until cooked to medium-rare to medium doneness, about 6 to 8 minutes. Discard any leftover dressing.
