Italian Cheese-Stuffed Meatloaf

Slice into flavorful herb-infused meatloaf with roasted peppers and gooey melted cheeses at the center.
Ingredients:
  • 2 eggs
  • 1 1/2 lb lean (at least 80%) ground beef
  • 2 cups soft French bread crumbs
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cloves garlic, minced
  • 1 can (8 oz) pizza sauce
  • 1 1/2 cups shredded provolone cheese (6 oz)
  • 1 jar (7.25 oz) roasted red bell peppers, drained, chopped
  • 1/4 cup chopped ripe olives
Instructions:
  • Preheat oven to 375°F. Line a 15x10x1-inch pan with foil and coat it with cooking spray. In a large bowl, whisk eggs, then mix in ground beef, breadcrumbs, Parmesan cheese, basil, salt, pepper, garlic, and 1/2 cup of pizza sauce until thoroughly combined.
  • Lay out a generous sheet of foil. Form the beef mixture into a delectable 12x10-inch rectangle. Sprinkle generously with provolone cheese, roasted peppers, and olives, leaving a small border around the edges. Roll up carefully from one of the 10-inch sides, ensuring a tight seal. Transfer the beautiful roll, seam side down, into the pan.
  • After baking for 40 minutes, take the loaf out of the oven. Spread the rest of the pizza sauce over the top of the loaf, and insert a meat thermometer into the center to ensure it's fully cooked.
  • Continue baking in the oven for an additional 15-20 minutes, or until the loaf is fully cooked in the center and reaches a temperature of 160°F. Allow it to rest for 10 minutes before slicing.
