Italian-inspired hamburger casserole with tomatoes, fettuccine noodles, and cheesy goodness for a veggie-packed one-dish meal.
Ingredients:
  • 1/2 lb lean (at least 80%) ground beef
  • 1 small onion, finely chopped (1/4 cup)
  • 1 can (8 oz) stewed tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1/2 teaspoon Italian seasoning
  • 6 oz uncooked fettuccine
  • 2 eggs
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1 cup small-curd cottage cheese
  • 1 cup frozen chopped broccoli, thawed, or chopped fresh broccoli
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Preheat oven to 350°F. Brown beef and onion in a 10-inch skillet over medium heat, then drain excess fat. Add tomatoes, tomato sauce, and Italian seasoning. Bring to a boil, then simmer covered for 10 minutes, stirring occasionally.
  • Cook the fettuccine according to package instructions, then drain.
  • In a medium bowl, whisk together one egg and butter until creamy. Gently fold in fettuccine and mozzarella cheese. Press the mixture evenly into a 9-inch quiche dish or pie plate, ensuring it covers the bottom and sides.
  • Combine cottage cheese and the last egg in a small bowl; layer over the fettuccine mixture. Top with broccoli, then evenly spread the beef mixture. Finish by sprinkling with Parmesan cheese.
  • Bake without covering for around 30 minutes, or until the center is hot. Allow it to sit for 10 minutes before slicing.
