Italian Meatball Pie

Fettuccine-crusted meatball pie - a delicious twist on classic flavors!
Ingredients:
  • 1 package (9 ounces) refrigerated fettuccine
  • 1 egg
  • 1 tablespoon butter or margarine, melted
  • 1 1/2 cups shredded Italian-style cheese blend (6 ounces)
  • 1 1/4 cups spaghetti sauce
  • 1 package (16 ounces) frozen Italian-style or regular meatballs, 1 inch in diameter (32 meatballs), thawed
  • 1 medium bell pepper, cut into thin strips
  • Chopped fresh parsley, if desired
Instructions:
  • - Preheat oven to 350°F and generously coat a 9x1 1/4-inch pie plate with cooking spray. - Prepare fettuccine according to package instructions, then drain.
  • In a large bowl, whisk together the egg and butter until smooth. Add fettuccine and 1 cup of cheese, then transfer the mixture into a pie plate. Press the mixture evenly on the bottom and up the sides of the plate using a wooden spoon or rubber spatula.
  • Combine the spaghetti sauce, meatballs, and bell pepper in a large bowl. Transfer the meatball mixture onto the fettuccine crust.
  • Cover with aluminum foil and bake for 45 minutes until bubbling. Then sprinkle with the remaining 1/2 cup of cheese and bake uncovered for about 5 more minutes until the cheese is melted. Finish by garnishing with fresh parsley.
