Italian meatball and zoodle tray bake recipe

Try this quick and healthy dinner: Italian meatball and zoodle tray bake - irresistible!
Ingredients:
  • 2 x 250g pkt zucchini noodles
  • 1 1/2 tsp dried Italian herbs
  • 2 x 420g pkt beef meatballs
  • 200g grape tomatoes
  • 36.40 gm olive oil
  • 95g (1/2 cup) kalamata olives
  • 50g feta, crumbled
  • 62.50 ml small fresh basil leaves
  • Warmed pita bread, to serve
Instructions:
  • Preheat your oven to 220°C (200°C fan forced) and prepare 2 baking trays by lining them with baking paper.
  • Spread the zucchini noodles out on the tray. Sprinkle with fragrant Italian herbs. Arrange the meatballs and tomatoes on top. Drizzle generously with oil. Bake for 15 minutes or until meatballs are perfectly golden and cooked through. Season to taste.
  • Sprinkle the tray bake with olives, feta, and fresh basil, and serve alongside warm pita bread.
