Grill fresh veggies for a unique pasta salad.
Ingredients:
  • 1 small zucchini or yellow summer squash , cut into 1-inch slices
  • 8 cherry tomatoes
  • 1 medium onion, cut into eighths
  • 1 package (8 ounces) fresh mushroom
  • 1/2 cup reduced-fat Italian dressing
  • 1 package Betty Crocker™ Suddenly Salad® classic pasta salad mix
  • 1/3 cup cold water
Instructions:
  • Combine zucchini, tomatoes, onion, mushrooms, and dressing in a large bowl, ensuring everything is evenly coated.
  • Prepare the grill by lightly brushing the rack with vegetable oil or using cooking spray. Heat the grill for direct heat. Grill the vegetables 4 to 6 inches from medium heat for 4 to 5 minutes, turning once and brushing with the remaining dressing until they are crisp-tender. Let the vegetables cool in a single layer in the refrigerator while you prepare the pasta.
  • Pour the Pasta mix into a 3-quart saucepan filled 2/3 full with boiling water. Simmer gently without a lid for 12 minutes, stirring every so often.
  • In the same bowl with any remaining dressing, combine Seasoning mix with cold water and set aside. Drain the pasta and rinse with cool water, then shake to drain well. If desired, cut grilled vegetables in half and stir them with the pasta into the seasoning mixture. Serve right away or refrigerate.
