"Showstopping lamb mince pizzas that will wow everyone."
Ingredients:
  • 18.20 gm olive oil
  • 400g lamb mince
  • 2 x 30cm pre-prepared pizza bases
  • 82.50 ml pizza sauce
  • 332.50 ml grated mozzarella cheese
  • 150g chargrilled red capsicum, cut into strips
  • 1 small red onion, thinly sliced
  • 187.50 ml pitted kalamata olives, halved lengthways
  • 82.50 ml finely grated parmesan cheese
Instructions:
  • Preheat the oven to 220°C. In a hot frying pan, sear the lamb mince until golden brown, around 4 to 6 minutes. Drain on paper towels in a bowl.
  • Lay out the pizza bases on 2 baking trays and generously spread pizza sauce, ensuring to leave a 2cm border around the edges.
  • Top each pizza with a generous 1/2 cup of mozzarella. Add capsicum, onion, olives, and mince on top. Finish by sprinkling with parmesan cheese and the leftover mozzarella.
  • Bake for 10 to 15 minutes, swapping halfway through, until beautifully golden. Enjoy!
