Whip up a quick and delicious meal with cheesy mushroom mostaccioli in under an hour!
Ingredients:
  • 6 oz. (1 1/2 cups) uncooked mostaccioli or penne (tube-shaped pasta)
  • 1/2 lb. lean (at least 80%) ground beef
  • 1 (15-oz.) can Italian-style tomato sauce
  • 1 (14.5-oz.) can diced tomatoes with basil, garlic and oregano, undrained
  • 1 (4.5-oz.) jar sliced mushrooms, drained
  • 2 oz. (1/2 cup) shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350°F. Grease an 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Cook the mostaccioli according to the package instructions, then drain.
  • In a large nonstick skillet, cook ground beef over medium-high heat until perfectly browned, stirring often. Drain any excess fat. Add tomato sauce, tomatoes, and mushrooms, and bring to a boil. Transfer the delicious mixture to a prepared baking dish.
  • Gently mix in the cooked mostaccioli. Cover baking dish with foil, sprayed side down, and seal tightly.
  • Bake the casserole at 350°F for 15 minutes, then sprinkle with cheese and bake uncovered for an additional 5 to 10 minutes until bubbly and cheese is melted.
