Prep ahead for a delicious cheesy beef and pasta casserole that's effortlessly flavorful.
Ingredients:
  • 1 1/2 pounds lean ground beef
  • 1 large onion, chopped (1 cup)
  • 1 large bell pepper, chopped (1 cup)
  • 2 large cloves garlic, finely chopped
  • 1 can (28 ounces) crushed tomatoes, undrained
  • 2 cups hot water
  • 1 envelope (1 ounce) onion soup mix (from 2-ounce package)
  • 3 cups uncooked rotini or fusilli (corkscrew) pasta (9 ounces)
  • 1 1/2 cups shredded Italian cheese blend or mozzarella cheese (6 ounces)
Instructions:
  • Coat a 13x9x2 inch rectangular baking dish with cooking spray.
  • In a 4-quart Dutch oven, sizzle beef, onion, bell pepper, and garlic over medium-high heat until beef is perfectly browned; then, drain the mix. Add tomatoes, water, dry soup mix, Italian seasoning, and pasta to the pot. Transfer the savory mixture into a baking dish.
  • Seal with foil and chill in the refrigerator for at least 8 hours, up to 24 hours.
  • Preheat oven to 375°F. Bake the casserole covered for 45 minutes. Sprinkle with cheese, then bake uncovered for about 10 minutes, or until the cheese is melted and the casserole is bubbly.
