Overnight baked cinnamon apple French toast: Make ahead for a delicious holiday breakfast.
Ingredients:
  • cooking spray
  • 1 cup light brown sugar
  • 0.5 cup light butter, melted
  • 1 teaspoon ground cinnamon
  • 3 Granny Smith apples - peeled, cored, and thinly sliced
  • 0.5 cup dried cranberries
  • 0.5 cup chopped pecans
  • 1 loaf Italian bread, cut into 1/2-inch slices
  • 1.5 cups egg substitute
  • 1.5 cups skim milk
  • 1 tablespoon vanilla extract
Instructions:
  • Grease a 9x13-inch casserole dish with cooking spray for easy cleanup and a non-stick finish.
  • Combine the brown sugar, butter, and 1 teaspoon of cinnamon in the casserole dish. Add the apples, cranberries, and pecans, then toss everything together until evenly coated. Spread the apple mixture evenly to cover the bottom of the dish.
  • Layer the bread slices over the apple mixture, overlapping slightly to completely cover the apples.
  • Combine egg substitute, skim milk, vanilla extract, and 2 teaspoons cinnamon in a bowl, then pour evenly over bread slices. Cover with aluminum foil and refrigerate for 4 to 24 hours.
  • Heat your oven to a toasty 375 degrees F (190 degrees C).
  • Place the covered casserole dish in the preheated oven for 40 minutes. Uncover and bake until lightly browned and egg mixture is set, about 5 more minutes. Allow to cool for 5 minutes before serving.
