Irresistible apple cinnamon French toast with a crunchy pecan topping - perfect for breakfast or brunch!
Ingredients:
  • 1 cooking spray
  • 8 slices cinnamon bread
  • 2 Golden Delicious apples - peeled, cored, and chopped
  • 4 large eggs, lightly whisked
  • 1 cup half-and-half
  • 0.5 cup milk
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup packed light brown sugar
  • 0.5 cup chopped pecans
  • 2 tablespoons maple syrup
Instructions:
  • Coat an 8x8-inch baking dish with cooking spray. Place 4 slices of bread in the dish, then layer half of the apples on top. Repeat the layers with the remaining ingredients.
  • In a bowl, whisk together eggs, half-and-half, milk, sugar, vanilla extract, cinnamon, and nutmeg until well combined. Pour the mixture over the bread, cover with foil, and refrigerate for 8 hours to overnight.
  • Allow to come to room temperature for 1 hour before baking.
  • Preheat the oven to 400°F (200°C). Combine butter, brown sugar, pecans, maple syrup, cinnamon, and nutmeg in a bowl. Spread the mixture over the apples.
  • Bake in the oven until beautifully puffed and golden, for 30-40 minutes.
