Italian sausage and sage fettuccine

Create a delicious budget-friendly fettuccine dish with only 6 simple ingredients.
Ingredients:
  • 400g fettuccine
  • 1 bunch fresh sage
  • 450g Italian pork and fennel sausages
  • 27.30 gm olive oil
  • 62.50 gm dry white wine
  • 500.00 ml tomato passata
  • 187.50 ml shaved parmesan
Instructions:
  • Boil pasta in salted water according to package instructions until al dente. Drain the pasta.
  • Set aside 12 sage leaves for later use. Finely chop the rest of the leaves. Make a slit on the side of each sausage using a small knife. Remove and discard the casings, then break the sausage meat into small pieces.
  • Heat oil in a large, deep frying pan over medium-high heat. Sauté whole sage leaves until crisp, about 1 minute. Transfer leaves to a plate lined with paper towel. Cook sausage meat in the same pan, stirring occasionally, until browned, about 3 minutes. Stir in chopped sage, then add wine and bring to a boil. Mix in passata, reduce heat to medium-low, cover, and simmer for 10 minutes until sausage is cooked through. Season with salt and pepper.
  • Serve the fettuccine in individual bowls, generously spoon over the sausage mixture, and garnish with fresh sage leaves and grated Parmesan cheese.
