Sausage Hash With Apples & Sage

Savory Italian sausage hash with onions, potatoes, apples, and fragrant herbs like parsley and sage - perfect for brunch or a light dinner.
Ingredients:
  • 2 tablespoons vegetable or olive oil
  • 1 large onion, cut into 1/2-inch dice
  • 1 pound Mild or hot Italian sausage, removed from its casing, crumbled
  • 1 pound starchy potatoes (such as Idaho), cut into 1/2-inch dice
  • 0.5 pound firm apples (e.g., Granny Smith), cut into 1/2-inch dice
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon rubbed sage or thyme leaves
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper
Instructions:
  • In a 12-inch non-stick skillet, warm 2 tablespoons of oil over low heat. To prevent potatoes from sticking, follow by preparing the onion and Italian sausage. Increase the heat to medium-high a few minutes before cooking. Once the oil starts to smoke slightly, add the onion and sausage. Stir often and cook until golden brown. While that cooks, dice the potatoes and apples and mix them with the remaining oil. Once the sausage mixture is done, transfer it to a bowl and set it aside.
  • Transfer potato mixture to a clean skillet and cook without stirring frequently until a golden-brown crust forms, approximately 10 minutes. While the potatoes are cooking, combine ketchup, mustard, dried sage, fresh parsley, and 2 tablespoons of water. (Note: Recipe can be made in advance up to 2 hours. Spread hot potatoes on a large baking sheet with edges; cover when cooled. When ready to serve, reheat skillet over medium-high heat, add potatoes, and re-crisp.)
  • Add the reserved sausage mixture back to the skillet and mix in the ketchup mixture. Season with salt and pepper. Cook, stirring frequently, until the hash is nicely browned, about 5 more minutes.
