Savory Italian sausage, creamy cheese, juicy tomatoes, and pasta all cooked together in a single pot for a comforting and easy weeknight meal you'll crave over and over.
Ingredients:
  • 1 tablespoon butter
  • 1/2 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1 tablespoon olive oil
  • 1 lb bulk mild Italian sausage
  • 1 cup diced onions
  • 1 cup diced red bell pepper (about 1 large)
  • 2 teaspoons Italian seasoning
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1 can (14.5 oz) Muir Glen™ organic fire-roasted crushed tomatoes, undrained
  • 12 oz uncooked penne pasta (3 3/4 cups)
  • 2 cups baby spinach
  • 1/2 cup shredded Italian cheese blend (4 oz)
  • 2 tablespoons shredded fresh basil leaves
Instructions:
  • In a skillet, melt butter over medium heat until golden and bubbly. Add bread crumbs and toast for 2 to 3 minutes, stirring often, until beautifully browned. Remove from skillet and place in a small bowl; set aside.
  • In a 5-quart Dutch oven, warm oil over medium heat. Cook sausage for 6 to 8 minutes, stirring occasionally, until no longer pink. Using a slotted spoon, transfer sausage to a bowl and keep warm. Add onions, bell pepper, Italian seasoning, and salt to the remaining oil and drippings. Cook over medium-high heat for 5 to 7 minutes until softened and starting to brown.
  • Add the broth and tomatoes to the pot and bring to a boil. Mix in the pasta and bring back to a boil. Lower the heat and simmer without covering for 18 to 20 minutes, remember to stir occasionally, until the pasta is cooked to your liking and the sauce thickens. Once the pasta is ready, fold in the sausage. Finally, add the spinach and stir for 30 to 60 seconds until it wilts.
  • After taking the dish off the heat, generously sprinkle with cheese, fresh basil, and crispy toasted bread crumbs.
