Italian Tomato Sauce

Homemade Italian-style tomato sauce.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1 large onion, chopped (1 cup)
  • 1 small green bell pepper, chopped (1/2 cup)
  • 2 large cloves garlic, finely chopped
  • 2 cans (14.5 oz each) whole tomatoes, undrained
  • 2 cans (8 oz each) tomato sauce
  • 2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon fennel seed
Instructions:
  • In a 3-quart saucepan over medium heat, sauté onion, bell pepper, and garlic in oil for 2 minutes, stirring occasionally.
  • Mix in the rest of the ingredients, gently crushing the tomatoes with a fork. Bring the mixture to a boil, then lower the heat and simmer uncovered for 45 minutes.
  • Enjoy the sauce right away, or store it covered in the refrigerator for up to 2 weeks, or freeze it for up to 1 year.
