Italian cherry trifle with panettone and liqueur - a decadent twist on a classic favorite.
Ingredients:
  • 2 x 480g jars morello cherries, pitted
  • 400g panettone*, halved, cut into 1cm-thick slices
  • 130ml or dry marsala*
  • 500g mascarpone
  • 50g caster sugar
  • 300ml thickened cream, lightly whipped
  • 40.00 ml grated chocolate, to serve
Instructions:
  • Strain the cherries, keeping the juice. Layer panettone at the bottom of a large glass dish, then add cherries. Repeat with the rest of the panettone and cherries, layering them.
  • Mix 300ml of the cherry juice with the Vin Santo and drizzle over the panettone. Whip mascarpone and sugar until smooth, then gently fold in the cream.
  • Pour the creamy mixture generously over the panettone, then chill in the refrigerator for a few hours.
  • Sprinkle the grated chocolate right before serving.
