Chocolate and cherry trifle

Indulgent Christmas trifle with layers of chocolate, cream, and tart cherries.
Ingredients:
  • 2 Free Range Eggs
  • 500g thick vanilla custard
  • 540g pkt rich chocolate cake
  • 680g jar sour pitted cherries
  • 60ml kirsch
  • 300ml thickened cream
  • 12.00 gm icing sugar
  • 50g dark chocolate, grated
Instructions:
  • Follow the packet directions to combine the cake mix with eggs, butter, and 175ml water. Allow the cake to cool on a wire rack, then slice it horizontally into 3 even layers.
  • Combine the custard and chocolate frosting mix from the packet in a bowl and whisk until smooth.
  • Separate cherries from their juice, saving 1/2 cup (125ml). Mix the reserved cherry juice with kirsch. Whip cream, icing sugar, and vanilla with an electric mixer until soft peaks form.
  • Begin by gently laying 1 cake layer at the bottom of a deep, straight-sided 20cm trifle bowl. Lightly drizzle the layer with 1/4 cup (60ml) of kirsch mixture. Proceed by adding one-third of the custard mixture, one-third of the cherries, one-third of the grated chocolate, and one-third of the cream mixture. Repeat layering in the same sequence, culminating with cherries, cream mixture, and grated chocolate on top. Cover the trifle and chill it in the fridge overnight to enhance the flavors.
