Panettone, chocolate and cherry trifle

Transform Christmas panettone into decadent chocolate cherry trifles.
Ingredients:
  • 350g pitted cherries
  • 80ml marsala
  • 600ml thickened cream
  • 200g dark chocolate
  • 200g creme fraiche
  • 35g icing sugar
  • 1/3 panettone, torn into 3cm pieces
Instructions:
  • In a bowl, mix the cherries and Marsala together, then set aside. While that sits, heat half of the cream in a small saucepan.
  • Heat the cream over medium heat until it simmers. Break 150g of chocolate into pieces and mix into the cream, stirring until you have a smooth and combined chocolate ganache. Let it cool down.
  • Whisk creme fraiche, icing sugar, and the rest of the cream until soft peaks form.
  • Construct the trifle by distributing half of the panettone evenly among 6 x 1-cup (250ml) glasses and lightly pressing them into the bottoms. Layer with half of the cherries and a bit of their liquid. Spoon half of the ganache, then half of the creme fraiche mixture. Repeat the layering, concluding with the rest of the creme fraiche mixture. Drizzle the remaining ganache over the top, grate the remaining 50g of chocolate, and sprinkle with icing sugar before serving.
