Panettone Muffins with Chocolate

Transform your leftover panettone into decadent muffins drizzled with chocolate ganache and topped with cream for a delicious holiday treat.
Ingredients:
  • 0.5 cup heavy whipping cream, divided
  • 1 (2 ounce) bar dark chocolate, chopped into small pieces
  • 1 (12 ounce) panettone, cubed
  • 3 eggs
  • 0.33333334326744 cup milk
  • 0.25 cup white sugar
Instructions:
  • In a saucepan, warm 1/4 cup of luxurious heavy cream until it's nearly boiling. Take it off the heat and gently mix in the chopped chocolate until you have a velvety smooth ganache. Pop it in the fridge for 30 minutes.
  • Heat your oven to a toasty 350 degrees F (175 degrees C).
  • Mix the remaining 1/4 cup of cream, cubed panettone, eggs, milk, and sugar in a bowl until fully combined. Reserve around 6 small tablespoons of the panettone mixture for later use.
  • Take the ganache out of the refrigerator and whip it with an electric blender until smooth and creamy.
  • Prepare a 6-cup muffin tin with greased cups or paper liners. Fill each muffin cup 3/4 full with the panettone mixture. Gently press your finger into each muffin to create an indentation, then add 1 teaspoon of chocolate ganache. Top each muffin with the 6 tablespoons of reserved panettone.
  • Bake until golden in the preheated oven for 15-20 minutes.
