Festive Christmas panettone recipe yields 3 fluffy loaves filled with candied fruit.
Ingredients:
  • 0.33333334326744 cup warm water (110 degrees F/45 degrees C)
  • 2 (.25 ounce) packages active dry yeast
  • 4 cups all-purpose flour
  • 0.5 cup warm milk
  • 0.66666668653488 cup white sugar
  • 2 egg yolks
  • 12 tablespoons unsalted butter
  • 2 cups candied mixed fruit
  • 2.5 teaspoons grated lemon zest
  • 2 tablespoons orange zest
  • 2 tablespoons butter, melted
  • 1 egg yolk
  • 1 tablespoon cream
  • 3 (7 x 4-inch) round paper panettone molds
Instructions:
  • Begin by warming a small bowl by rinsing it with hot water. Pour in warm water and sprinkle 1 package of yeast over it, allowing the yeast to dissolve. Next, stir in 1/2 cup of flour, cover the bowl with plastic wrap, and let it sit for 30 minutes or until doubled in size. Then, sprinkle the remaining yeast over warm milk and let it dissolve. In a separate bowl, beat together sugar, eggs, egg yolks, and vanilla. Stir in the milk-yeast mixture. Finally, add the prepared sponge and mix until well incorporated.
  • Mix together the butter and remaining 3 ½ cups of flour until crumbly. Gradually add the egg mixture and beat on high speed for 3 to 4 minutes until the dough is elastic and long strands begin to form. Stir in the fruit and zests. Transfer the dough into an oiled bowl, cover it with plastic wrap, and let it rise in a warm place until doubled in size, approximately 2 to 3 hours.
  • Prepare three 7 x 4-inch paper molds by brushing them with melted butter. Then, deflate the dough on a lightly floured surface and divide it into 3 pieces. Roll each piece into a ball and place it in the molds. Set the molds on a baking sheet, ensuring they are 4 inches apart, and loosely cover them with plastic wrap. Allow the dough to rise in a warm place until doubled, which should take about 2 hours.
  • Preheat the oven to 400 degrees F (200 degrees C), then use oiled scissors to cut an X on top of each loaf. Next, mix the egg yolk with cream and lightly brush the tops of the loaves with the egg wash.
  • Place the baking sheet with the loaves in the lower third of the preheated oven. After 10 minutes, reduce the heat to 375°F (190°C). Bake for an additional 30 minutes, and if the tops brown too quickly, cover with foil. The loaves are ready when a wooden skewer inserted into the centers comes out clean. Allow to cool on a wire rack.
