Transform leftover panettone into a delectable dessert or indulgent breakfast.
Ingredients:
  • 3 eggs
  • 80ml cream
  • 80ml milk
  • 40.00 gm caster sugar
  • 2.20 gm vanilla extract
  • 2 1.5cm-thick rounds of panettone* (cut across horizontally), quartered
  • 250g frozen mixed berries, thawed
  • 24.00 gm icing sugar, plus extra to dust
  • 40g unsalted butter
  • Thick cream or yoghurt, to serve
Instructions:
  • Take a wide, shallow bowl and whisk together eggs, cream, milk, sugar, and vanilla. Add the panettone, making sure it's well soaked, then let it sit for 10 minutes. Gently press down occasionally to help it absorb the mixture.
  • In a blender, combine half of the berries with icing sugar and 1 tablespoon of water. Blend until you have a smooth mixture. Add the blended mixture to the remaining berries and set aside.
  • Melt half of the butter in a non-stick frypan over medium heat. Remove excess egg mixture from half of the panettone slices and cook for 1-2 minutes on each side until golden brown. Keep warm as you repeat the process with the remaining butter and panettone slices.
  • To plate, arrange two slices per plate, sprinkle with icing sugar, and garnish with berry compote and a dollop of cream.
