Treat yourself with decadent coconut French toast for a wonderful Saturday!
Ingredients:
  • 40g butter
  • 55g brown sugar
  • 1/2 ripe pineapple, peeled, halved, cored, thickly sliced
  • 2 eggs, lightly whisked
  • 125ml coconut milk
  • 0.63 gm ground cinnamon
  • 8 slices panettone
  • Maple syrup, to serve
  • Shredded makrut lime leaves, to serve
Instructions:
  • In a large frying pan over medium heat, melt half of the butter. Sprinkle 1 tablespoon of sugar over both sides of the pineapple. Cook half of the pineapple in the pan for 1-2 minutes on each side until caramelized. Transfer to a plate and repeat with the remaining pineapple.
  • Combine eggs, coconut milk, cinnamon, and sugar in a shallow bowl. Melt butter in a pan. Dip panettone slices in the mixture and cook until golden brown and cooked through. Repeat in batches with remaining slices. Transfer to a plate.
  • Serve French toast on individual plates, layer with pineapple, generously drizzle with maple syrup, and garnish with fragrant lime leaves.
