Elevate your breakfast with coconut-infused French toast!
Ingredients:
  • 4 eggs
  • 270ml can coconut milk
  • 1.25 gm ground cinnamon
  • 20.00 gm caster sugar
  • 25g butter
  • 8 slices thick white bread
  • 250.00 ml Greek Style Yoghurt
  • 2 large bananas, sliced
  • 57.20 gm honey
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced and line a large baking tray with parchment paper.
  • Combine the eggs, coconut milk, cinnamon, and sugar in a shallow dish, whisking until well blended.
  • In a large frying pan over medium heat, melt 1/4 of the butter. Dip 2 bread slices in the egg mixture until well soaked. Remove excess mixture. Cook bread for about 2 to 3 minutes on each side until golden. Transfer to a prepared tray and keep warm in the oven. Repeat the process with the remaining bread slices, egg mixture, and butter.
  • Plate the French toasts evenly. Add a dollop of yogurt and sliced banana on top of each piece. Finish by drizzling honey over the plated French toasts before serving.
