Savory deep-dish quiche packed with pizza toppings, ideal for a satisfying dinner paired with salad.
Ingredients:
  • nonstick cooking spray
  • 1 tablespoon fine cornmeal
  • 1 (16 ounce) package refrigerated pizza dough
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded extra-sharp Cheddar cheese
  • 0.25 cup grated Parmesan cheese, or to taste
  • 0.5 cup chopped sun-dried tomatoes, or to taste
  • 8 ounces Italian sausage, cooked, pork
  • 4 ounces sliced baby portobello mushrooms
  • 1 small sweet red pepper, thinly sliced
  • 0.25 cup sliced black olives, or to taste
  • 2 cups heavy cream
  • 4 large eggs
  • 1 teaspoon crushed dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon whole fennel seeds
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon crushed red pepper
  • 0.25 teaspoon garlic powder
  • 14 slices pepperoni
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 1/2-inch round springform pan with nonstick spray and dust it evenly with cornmeal.
  • Gently roll and stretch the pizza dough to a 15 1/2-inch diameter. Place it in the pan, ensuring it covers the bottom and sides with a slight overhang, stretching as necessary.
  • Combine the mozzarella, Cheddar, and Parmesan cheeses in a bowl and set aside 1 cup in the refrigerator. Sprinkle half of the remaining cheese over the dough, then layer with sun-dried tomatoes, sausage, mushrooms, sweet pepper, and olives in that order.
  • In a 4-cup liquid measure, whisk together eggs, cream, basil, oregano, fennel seeds, garlic salt, crushed red pepper, and garlic powder until fully combined.
  • Drizzle half of the luscious custard mixture over the layers. Sprinkle the rest of the fresh cheese on top, then evenly pour the remaining custard. Carefully roll the dough edges over the delectable cheese and custard.
  • Wrap the springform pan securely in foil to prevent leaks. Bake in preheated oven for 1 hour and 15 minutes. Cover the top with foil to avoid excessive browning and continue baking until completely set, approximately 45 minutes more.
  • Remove from the oven and sprinkle with the remaining 1 cup of cheese and pepperoni slices. Return to the oven and bake until the cheese melts, approximately 10 minutes.
  • After baking, transfer to a cooling rack. Cover loosely with foil and allow to rest for approximately 2 hours until fully set and remaining hot.
  • Remove the ring from the dish. Use a serrated knife to cut through the outer crust, and then switch to a sharp chef's knife to slice the pieces completely.
