Savory lasagna with Italian sausage, spinach, homemade sauce, and three cheeses, baked to perfection at 350 degrees.
Ingredients:
  • 12 uncooked lasagna noodles
  • 1 pound sweet Italian sausage
  • 0.66666668653488 cup chopped onions
  • 0.66666668653488 cup chopped fresh parsley, divided
  • 0.5 tablespoon minced garlic
  • 3 (6 ounce) cans tomato paste
  • 2 cups water
  • 1 (15 ounce) can tomato sauce
  • 1.5 teaspoons Italian seasoning
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons dried basil leaves
  • 1 pound part-skim ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 0.5 cup grated Parmesan cheese
  • 3 large eggs
  • 2 teaspoons garlic salt
  • 3 cups shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a deep 9x13-inch baking dish.
  • 1. Boil a large pot of lightly salted water. 2. Add lasagna noodles to the boiling water and cook until al dente, about 8 minutes. 3. Drain the noodles.
  • In a large skillet over medium heat, cook sausage, onions, 1/3 cup parsley, and garlic until sausage is browned and crumbly, 5 to 7 minutes. Drain fat. Add tomato paste, water, tomato sauce, Italian seasoning, oregano, and basil. Stir until well combined. Cover and simmer for 5 minutes, stirring occasionally.
  • Combine ricotta, spinach, Parmesan, remaining parsley, eggs, garlic salt, and pepper in a large bowl, mixing until fully incorporated.
  • Start by generously spreading a layer of 2 cups of the savory sauce in the bottom of your baking dish. Top it with four noodles, half of the flavorful ricotta mixture, a third of the remaining sauce, and 1 cup of melty mozzarella cheese. Repeat these delicious layers once more, then end with the last of the noodles, sauce, and mozzarella. Securely cover the dish with aluminum foil for perfect cooking.
  • Place the dish in the oven for 45 minutes, then uncover and bake for an additional 10 minutes until the cheese is golden and bubbling. Allow it to cool for 10 minutes before serving.
