Savory Italian meatloaf, perfect for a quick and delicious dinner, with flavorful leftovers!
Ingredients:
  • 2 brown onions, finely chopped
  • 1kg beef mince
  • 225.00 gm (200g jar) sun-dried tomato pesto
  • 625.00 ml fresh white breadcrumbs
  • 1 lemon, rind finely grated
  • 125.00 ml shredded parmesan cheese
  • 40g butter, melted
  • dressed salad greens, to serve
Instructions:
  • Preheat the oven to 200°C. Grease a 7cm deep, 10cm x 21cm loaf pan, and line it with baking paper, leaving a 2cm overhang on both long ends.
  • In a frying pan over medium heat, heat oil and sauté onion and garlic until soft, about 4 minutes. Let cool.
  • Mix together the mince, pesto, 1 cup of breadcrumbs, lemon rind, egg, and half of the onion mixture in a large bowl. Season generously with salt and pepper. Ensure the ingredients are thoroughly combined before transferring the mixture into a loaf pan.
  • Mix together the leftover breadcrumbs, onion mixture, Parmesan, and butter in a bowl. Spread over the meatloaf. Bake uncovered for 30 minutes. Lightly cover with foil to avoid excessive browning. Bake for an additional 20-25 minutes until fully cooked. Allow it to cool for 10 minutes in the pan, then transfer to a serving plate. Slice and enjoy with a side salad.
