Velvety vegan Cheddar queso with spicy black beans and tomatoes.
Ingredients:
  • 8 ounces shredded vegan Cheddar cheese
  • 0.75 cup water, divided
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 0.5 cup canned Mexican-style black beans
  • 1 tablespoon pickled jalapeno slices
Instructions:
  • In a microwave-safe bowl, heat vegan cheese for 1 minute at 900W. Take out of the microwave and mix in 1/2 cup water while stirring. Microwave for another minute at 900W. Stir until smooth. Adjust consistency by adding more water and microwaving as needed.
  • Gently mix diced tomatoes and black beans into the queso. Sprinkle with pickled jalapenos. Serve while warm.
