Jacket potato with apple coleslaw

Light and delicious coleslaw made with yogurt instead of mayo, perfect atop a baked potato.
Ingredients:
  • 4 (x 275g each) Sebago potatoes
  • 165.00 ml Yoghurt Natural
  • 11.80 gm Dijon mustard
  • 2 tsp apple cider vinegar
  • 250g cabbage (red and green), finely shredded
  • 1 pink lady apple, unpeeled, cut into matchsticks
  • 3 green onions, thinly sliced
  • 57.50 gm walnuts, toasted
Instructions:
  • Preheat the oven to 220C (200C fan-forced). Prick the potatoes with a fork and wrap each one in foil. Bake for 1 hour and 10 minutes, or until the potatoes are tender.
  • In a large bowl, mix together yogurt, mustard, and vinegar. Stir in cabbage, apple, and onion. Season with salt and pepper, then toss everything together until well coated.
  • Top the potatoes with a generous helping of apple coleslaw and a sprinkle of walnuts for added crunch.
