Spicy jalapeño jelly with perfect flavor balance, ideal for pairing with cheeses and meats. Easy to make and irresistibly delicious.
Ingredients:
  • 1 large green bell pepper
  • 12 jalapeno peppers
  • 1.5 cups apple cider vinegar
  • 1 pinch salt
  • 4.25 cups granulated sugar
  • 4 ounces liquid pectin
  • 4 jalapeno peppers, seeded and finely chopped
Instructions:
  • Prepare the ingredients.
  • In a food processor or blender, combine green bell pepper and 12 whole jalapeño peppers, working in batches if needed, and process until finely chopped.
  • In a large saucepan, combine peppers and cider vinegar. Bring to a boil, then simmer for 15 to 20 minutes.
  • Pour the mixture through 2 layers of cheesecloth, removing and discarding the pulp. You should be left with around 1 cup of liquid.
  • Pour the liquid back into the saucepan and mix in salt and sugar until they dissolve completely. Bring the mixture to a vigorous boil over medium-high heat. Once it reaches a rolling boil (one that cannot be stirred down), let it boil for exactly one minute, then stir in the liquid pectin.
  • Add the rest of the finely chopped jalapeños and gently mix them in.
  • Fill sterile jars, leaving a 1/4-inch space at the top.
  • Process jars in a hot water bath to seal. Chill jelly after opening.
