Red and Green Christmas Jalapeno Jelly

Delicious red pepper and jalapeno jelly, ideal for holiday dishes or as a spread with cream cheese on crackers.
Ingredients:
  • 1 cup chopped red bell pepper
  • 0.5 cup chopped jalapeno pepper
  • 5 cups white sugar
  • 1.5 cups apple cider vinegar
  • 1 (6 fluid ounce) container liquid pectin
Instructions:
  • Prepare the bell and jalapeno peppers by removing stems, veins, and most of the seeds. Then, finely chop the peppers in a food processor.
  • In a large pot over high heat, mix together bell peppers, jalapenos, sugar, and vinegar. Bring to a boil and let it bubble for 3 minutes. Take off the heat and let it cool for 5 minutes before using.
  • Continuously stir in the pectin and allow the mixture to cool for an additional 2 minutes. Then, stir for 1 more minute.
  • Transfer the mixture into hot, sterilized jars and cover with sterilized lids. Seal tightly with bands and let the jars cool gradually to create a vacuum seal.
