Spicy bacon stuffing enhances Thanksgiving turkey.
Ingredients:
  • 3 (8.5 ounce) packages cornbread mix
  • 1.5 cups milk, divided
  • 6 slices bacon
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 1 stick butter, divided
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can cream-style corn
  • 4 tablespoons finely chopped jalapeno pepper, or to taste
  • 2 tablespoons chopped pimento peppers
  • 1 tablespoon white sugar
  • 1 teaspoon sliced jalapeno pepper, or to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a 9x13-inch pan.
  • In a bowl, mix together cornbread mix, 1 cup of milk, and eggs until well blended (batter will be lumpy). Pour the mixture into the prepared pan.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 15-30 minutes, then crumble and set aside in a bowl.
  • Lower the oven temperature to 350°F (175°C).
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, turning occasionally, for about 10 minutes. Drain the bacon on paper towels, leaving 2 tablespoons of grease in the pan. Allow the bacon to cool slightly for about 5 minutes, then crumble it and set aside.
  • In a skillet, heat the delicious bacon grease until sizzling. Sauté the onion, bell pepper, and celery until tender, about 5-7 minutes. Set aside for later.
  • In a large saucepan over medium heat, melt 6 tablespoons of butter. Add corn, cream-style corn, the rest of the milk, chopped jalapenos, pimentos, sugar, and salt. Cook for 5 to 7 minutes until heated through. Then, mix in bacon, sauteed vegetables, and 2 cups of crumbled cornbread. Transfer the mixture to a baking dish.
  • Combine the remaining melted butter with the remaining 1/2 cup of crumbled cornbread, then sprinkle this mixture over the stuffing.
  • Bake until crumbs turn light brown, approximately 10 minutes in preheated oven. Top with sliced jalapenos before serving.
