Classic Aussie lamingtons!
Ingredients:
  • 250g butter
  • 215g (1 cup) caster sugar
  • 3 eggs
  • 8.80 gm vanilla extract
  • 300g (2 cups) self-raising flour
  • 125ml (1/2 cup) milk
  • 170g (2 cups) desiccated coconut
  • 300ml thickened cream
  • 1/2 tsp vanilla bean paste
  • 245g (3/4 cup) strawberry jam
  • 450g (3 cups) icing sugar mixture
  • 20.00 gm dark Dutch cocoa
  • 30g butter, chopped
  • 185ml (3/4 cup) water, boiling
Instructions:
  • Preheat your oven to 180C (160C fan forced) and line a 20 x 30cm slice pan with baking paper. In a bowl, use electric beaters to whisk butter and sugar until pale and creamy. Gradually beat in eggs, one at a time, until well combined.
  • Add the extract and mix until combined. Gently mix in the flour and milk until fully incorporated. Transfer the mixture to the pan, then smooth the top. Bake for 35-40 minutes or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then move it to a wire rack to cool completely.
  • Trim the edges of the cake and cut it into 15 squares. Place a wire rack over a tray and set it aside. Spread coconut on a plate. In a heatproof bowl, combine icing sugar, cocoa, and butter. Pour in boiling water and stir until well melted and combined.
  • Dip each cake square in chocolate coating using two forks to coat it evenly. Let any extra coating drip off before rolling it in coconut. Allow the cake squares to set on a wire rack for 30 minutes. Repeat with the rest of the cake squares, chocolate mixture, and coconut.
  • Whip cream and vanilla bean paste in a bowl until stiff peaks form using electric beaters with a whisk attachment. Transfer the mixture into a piping bag fitted with a 1cm star nozzle. Slice the lamingtons horizontally with a serrated knife (refer to Tip 6, page 106).
  • 1. Spread a generous amount of jam on one half of the lamington. Pipe a generous amount of cream on top. Sandwich with the remaining lamington half and gently transfer to a tray. Repeat with the rest of the lamingtons, jam, and cream. Chill the tray in the fridge for 30 minutes to allow the cream to set.
