Polish kolaczki cookies with various jam fillings, perfect for holidays or any occasion.
Ingredients:
  • 0.5 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1.25 cups all-purpose flour
  • 0.25 cup strawberry jam
  • 0.25 cup sifted confectioners' sugar
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a cookie sheet.
  • Using an electric mixer, cream together butter and cream cheese until fluffy. Gradually add flour, making sure to beat well after each addition.
  • Roll out dough on a dusted surface until it’s 1/8 inch thick. Cut into 2-inch circles. Fill each circle with 1/4 teaspoon jam. Fold edges together, slightly overlapping. Space 2 inches apart on the baking sheet.
  • Place in the warm oven for 15 minutes. Transfer to a wire rack to cool thoroughly, and dust with confectioners' sugar.
