Create a flavorful Jamaican baked ham with a perfect blend of chili, nutmeg, and thyme for your Christmas meal.
Ingredients:
  • 8kg cooked leg ham
  • 2 long green chillies, roughly chopped
  • 3 long red chillies, roughly chopped
  • 40.00 ml white wine vinegar
  • 59.40 gm brown sugar
  • 2 tsp ground allspice
  • 1.25 gm ground nutmeg
  • 4 garlic cloves, chopped
  • 2 tsp dried thyme leaves
  • 36.40 gm peanut oil
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • With a small sharp knife, carefully cut the ham rind about 8cm from the shank. Use your thumb to gently separate the rind from the fat, starting at the opposite end of the shank. Peel back and discard the rind (see note). Score the fat crosswise at 1cm intervals, making sure not to cut too deeply. Wrap the shank end in foil.
  • Combine chillies, vinegar, sugar, allspice, nutmeg, garlic, thyme, and oil in a small food processor. Blend until a smooth paste forms. Season with salt and pepper to taste.
  • Place the ham on a lightly greased wire rack in a large roasting pan. Pour boiling water into the pan until it reaches 2cm up the side. Brush the ham with the chili mixture. Bake for 1 hour and 30 minutes until golden and crusty. Remove and discard the foil from the shank before serving.
