Easy oven-baked jerk chicken with flavorful spice blend for minimal cleanup.
Ingredients:
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground allspice
  • 1 teaspoon packed brown sugar
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried minced garlic
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon dried thyme leaves
  • 1 (2 to 3 pound) whole chicken, cut into pieces
Instructions:
  • Combine a tantalizing blend of salt, allspice, brown sugar, onion powder, garlic, nutmeg, black pepper, ginger, cayenne pepper, cinnamon, and thyme in a spacious bowl. Add in the delectable chicken pieces and toss them gently until they are evenly coated with the flavorful seasoning. Cover the bowl and let the magic work while the chicken marinates in the refrigerator for 2 to 4 hours.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking dish with vegetable oil.
  • Lay the chicken pieces skin-side up in the baking dish. Bake in the preheated oven for 1 hour and 20 minutes or until juices run clear, and the chicken is no longer pink near the bone. Insert an instant-read thermometer near the bone, and it should read 165°F (74°C).
  • Preheat the oven to broil and cook until the skin is crispy, which should take about 2 to 5 minutes.
