Grilled shrimp with spicy habanero, green onions, soy sauce, vinegar, and Jamaican jerk seasoning in foil.
Ingredients:
  • 1 cup soy sauce
  • 0.75 cup distilled vinegar
  • 1 medium white onion, coarsely chopped
  • 0.25 cup extra-virgin olive oil
  • 4 green onions, coarsely chopped
  • 2 tablespoons dried thyme
  • 2 habanero peppers, stemmed
  • 1 tablespoon brown sugar
  • 1 tablespoon ground nutmeg
  • 1 teaspoon ground allspice
  • 1 pound uncooked medium shrimp, peeled and deveined
  • heavy duty aluminum foil
Instructions:
  • Heat up the grill until it reaches medium-high heat.
  • Blend soy sauce, vinegar, onion, olive oil, green onions, thyme, habanero peppers, sugar, nutmeg, allspice, and cloves in a food processor for 15 seconds until a jerk seasoning paste forms.
  • 1. Mold foil into a bowl shape, then gently place the shrimp inside and generously coat with jerk seasoning. 2. Grill the foil bowl with the shrimp, leaving a small opening for ventilation, until shrimp turns pink and cooked through, stirring occasionally, for approximately 10 minutes. 3. Transfer the grilled shrimp to a medium bowl for serving.
  • Warm the leftover sauce in a small saucepan on medium heat for 2 to 3 minutes, then generously spoon it over the shrimp.
