Japanese beef curry recipe

Irresistible beef curry with hearty potatoes and carrots in a delicious sauce.
Ingredients:
  • 9.20 gm olive oil
  • 1kg chuck beef steak, cut into 3-4cm pieces
  • 1 brown onion, cut into thin wedges
  • 3 tsp finely grated fresh ginger
  • 3 garlic cloves, finely chopped
  • 20.00 gm madras curry powder
  • 40g (1/4 cup) plain flour
  • 3 potatoes, peeled, coarsely chopped
  • 1 large carrot, peeled, coarsely chopped
  • 1 green apple, cored, coarsely grated
  • 20.80 gm tomato sauce
  • 24.40 gm Worcestershire sauce
  • 21.00 gm light soy sauce
  • 1 tsp garam masala
  • Steamed sushi rice, to serve
  • Toasted sesame seeds, to sprinkle (optional)
  • Quick vegetable pickle, to serve (optional, see notes)
Instructions:
  • In a large casserole dish, heat the oil and butter over high heat until sizzling. Season the beef and brown in batches for about 5 minutes per batch. Transfer to a plate using tongs.
  • Lower the heat and cook the onion until golden, stirring often for 5 minutes. Add the ginger and garlic, cook for 1 minute until aromatic, then stir in the curry powder.
  • Turn up the heat to high and add the beef back to the dish. Mix well. Sprinkle over the flour and stir thoroughly to coat. Pour in 750ml (3 cups) water, stirring and scraping the bottom of the dish with a wooden spoon until smooth. Introduce the potato, carrot, and apple. Bring to a boil, then lower the heat, cover, and simmer for 2 hours until the beef is tender. Finally, remove from heat.
  • Combine tomato sauce, Worcestershire sauce, soy sauce, and garam masala. Season to taste. Allow it to rest for 10 minutes. Serve the flavorful curry with steamed rice, and top it with sesame seeds, if desired. Consider adding a quick pickle as a delightful condiment.
