Try a unique Javanese curry with extra heat from fresh chillies.
Ingredients:
  • 5 green onions, roughly chopped
  • 3 garlic cloves, peeled, roughly chopped
  • 3cm piece ginger, peeled, roughly chopped
  • 2.50 gm ground nutmeg
  • 1/2 tsp white pepper
  • 36.80 gm canola oil
  • 1kg beef chuck steak, cut into 3cm pieces
  • 125.00 ml kecap manis
  • 2 cinnamon sticks
  • 1 large tomato, cut into wedges
  • 42.00 gm lime juice
  • Steamed white long-grain rice, to serve
  • 2 small red chillies, deseeded, thinly sliced, to serve
Instructions:
  • Combine fresh green onions, garlic, ginger, nutmeg, pepper, and 1 teaspoon of salt in a food processor. Blend until a smooth paste is achieved.
  • In a large saucepan over medium-high heat, heat oil. Add paste and cook for 2 minutes until aromatic, stirring occasionally. Add steak and brown for 3 to 4 minutes. Then pour ketcap manis and 1 1/2 cups water over meat. Stir well. Add cinnamon, bring to a boil, then reduce heat and simmer partially covered for 1 hour.
  • Combine tomato and tangy lime juice in a pan. Cook uncovered for 30 minutes until the steak is tender. Take out the cinnamon, then pour the flavorful curry over rice and serve with spicy chillies.
