Japanese beef curry with potatoes, onions, and carrots made flavorful and easy with a convenient boxed sauce mix.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into 1/2-inch cubes
  • 2 medium onions, diced
  • 5 medium carrots, cut into 1/4-inch rounds
  • 6 cups warm water, or more as needed
  • 3 large potatoes, peeled and cut into 1/2-inch cubes
  • 2 (3.5 ounce) containers curry sauce mix (such as S&B® Golden Curry®)
Instructions:
  • In a large saute pan over medium heat, heat oil. Stir-fry beef until browned and cooked through, 5 to 7 minutes. Add onions and carrots and continue stir-frying until onions are golden, 7 to 8 minutes.
  • Pour water into the pan and gently add the potatoes, ensuring they are covered with water. Place a lid on the pan and simmer until the potatoes are tender, about 10-12 minutes. Then, add the curry sauce mix and stir constantly until the mixture thickens, which should take about 3-5 minutes.
